Apple, Raisin & Almond Crunch Pudding

This scrummy baked pudding is easy peasy lemon squeezy. (No lemons required, but you know what we mean), simply made by layering sliced apples with flaked almonds, grated marzipan and Jordans Light Granola.

Ingredients

  • 3 cups Jordans Organic Granola
  • 1 tsp butter
  • 4 apples, peeled, cored and thinly sliced
  • 4 tbsp of water
  • ¼ flaked almonds
  • 250 g (9 oz) Marzipan, coarsely grated
  • Serve with; whipped cream, ice cream, custard...whatever takes your fancy.

Directions

  • Preheat the oven to 350°F (180°C). Use the butter to grease a deep baking dish.
  • Arrange half the apple slices in the base of the dish and add 2 tablespoons of water. Scatter half the almonds, half the grated marzipan and half the Jordans Light Granola over the top. Repeat the layers.
  • Bake for 20-25 minutes until golden. Serve with whipped cream, ice cream, custard or whatever takes your fancy....
Cook's Tips: Slice the apples thinly so that they cook until tender. Fancy a change? Use Jordans Muesli varieties instead of Light Granola for a tasty crunchy pudding. If the marzipan is quite soft, chill it in the fridge before grating it.
