Berry Christmas Cookies Recipe

There is plenty of festive food around at Christmas, but we thought we should add one more to the mix for good measure. These cookies use a mix of flour and Jordans Organic Granola, sugar, baking powder and ground cinnamon, and are stuck together using gooey golden syrup. Plus you never know who might make an unexpected visit, so these treats will ensure you don’t get caught without a little something to hand out.

Directions
  1. Preheat the oven to 350°F (180°C). Grease and line two baking sheets with parchment paper.
  2. In a large bowl, preferably a Christmas-themed one, mix together the flour and Jordans Granola, breaking up any large clusters. Stir in the sugar, baking powder and ground cinnamon.
  3. Melt the butter and syrup in a small non-stick saucepan. Do not allow the mixture to boil. Pour onto the dry ingredients and get mixing. Add in pumpkin seeds and dried cranberries.
  4. Shape the mixture into 12 balls and place them on the prepared baking sheets, spaced well apart to allow for spreading. Flatten each ball slightly with the back of a fork. Bake for 10-12 minutes or until pale golden brown; you'll know when they're done by the smell. Cool slightly before transferring to a wire rack to cool completely; as burning your tongue stops you enjoying them properly.

  • ¾ cup plain whole wheat flour
  • ¾ cup Jordans Organic Granola or any Jordans Muesli variety
  • 1/3 cup light brown sugar
  • 2 tsp baking powder
  • ¼ tsp ground cinnamon
  • 1/3 cup butter
  • 3 tbsp golden syrup (or substitute with corn syrup)
  • ¼ cup pumpkin seeds (optional)
  • ¼ cup dried cranberries (optional)
