Chunky Nut Breakfast Bites

Ingredients
- 3 cups Jordans Morning Crisp Bursting With Nuts
- 1 cup oatmeal
- ½ cup butter
- ½ cup light brown sugar
- ¼ cup dried apple, chopped
- ¼ cup dried apricotes, chopped
- ¼ cup sultanas or raisins
- 1 large egg, beaten
Chunky Nut Breakfast Bites
These delectable breakfast bites combine Jordans Morning Crisp Bursting with Nuts and wholesome oatmeal to make the best breakfast bite you’ve ever had….rather like a flapjack crispy cluster….did we just re-invent the wheel?
Ingredients
- 3 cups Jordans Morning Crisp Bursting With Nuts
- 1 cup oatmeal
- ½ cup butter
- ½ cup light brown sugar
- ¼ cup dried apple, chopped
- ¼ cup dried apricotes, chopped
- ¼ cup sultanas or raisins
- 1 large egg, beaten
PREP TIME: 15 MIN
LEVEL: Easy
COOKING TIME: 10 MIN
SERVES: 15
Directions
- Preheat the oven to 350°F, (180°C). Put 12 paper muffin cases into muffin tins.
- Melt the butter in a large saucepan over low heat, taking care that it doesn't get too hot. Stir in the sugar.
- Remove from the heat and stir in the apple, apricots and sultanas/raisins, oatmeal and Jordans Morning Crisp Bursting with Nuts. Add the beaten egg and stir well. Spoon into the muffin tray.
- Bake for 10-12 minutes, until set and light golden brown. Leave to cool in the tin....if you can!
Cook's Tips:
If you have any left (unlikely) store in an airtight tin and polish them off within 1 week.
